Role Overview Join our culinary team as a Commis Sushi, where you’ll play a key role in delivering exceptional Japanese dining experiences at The Chedi Al Bait, Sharjah. In this position, you will support daily sushi kitchen operations in a luxurious environment, ensuring every sushi creation reflects our high standards of quality, freshness, and presentation.
Responsibilities
Support daily sushi preparation, assembly, and plating under the guidance of the Sushi Chef or Senior Chefs.
Follow sushi recipes, portion standards, and presentation guidelines to maintain consistency and quality.
Assist in preparing ingredients such as fish, seafood, rice, vegetables, and condiments.
Maintain proper storage, handling, and rotation of raw ingredients according to hygiene standards.
Prepare and organize workstations, including mise-en-place for sushi service.
Maintain cleanliness and sanitation of sushi counters, tools, knives, and storage areas.
Adhere to hygiene, safety, and sanitation procedures at all times, following HACCP guidelines.
Support smooth kitchen operations by performing side duties and additional tasks assigned by the Sushi Chef or Kitchen Management.
Must-Have Requirements
Prior experience as a Commis Sushi or Commis in a hotel environment.
Basic culinary skills with knowledge of sushi preparation methods and kitchen standards.
Understanding of food hygiene, safety, and sanitation procedures, especially for raw fish and seafood.
Ability to work efficiently in a fast-paced sushi kitchen environment.
Strong attention to detail and commitment to maintaining high culinary standards.
Presentable and well-groomed appearance in line with hotel guidelines.
Ability to work flexible schedules, including weekends and holidays.
Team-oriented with a positive, proactive attitude.
Basic organizational skills for mise-en-place, storage, and inventory support.
Nice-to-Have Requirements
Prior experience working in a luxury hotel or fine dining sushi environment.
Familiarity with international sushi standards, Japanese culinary techniques, and presentation styles.
